Roasting tomatoes brings out their sweetness

Often in winter, the quality of tomatoes is not stellar, even when you choose hothouse or organic ones.  I have a recipe that will bring out every ounce of flavor from those tomatoes, whether they are fresh, slightly overripe, or even not quite ripe.  This recipe doesn’t care if the tomatoes are a bit long in the tooth. Roasting tomatoes brings out their sweetness, and is a simple way to enjoy this lycopene-laden fruit. Lycopene has been found (in very preliminary scientific research) to aid in prevention of prostate cancer and to reduce the effect of UV damage to skin.  Tasty, and good for you!

I add roughly chopped garlic to my tomatoes, along with kosher salt and freshly ground black pepper.  You can snip some rosemary and throw it in, as well, if you have some handy.  I use a generous amount of olive oil, too.  Just look at these beauties, from start to finish:

I’ve been known to eat these straight out of the pan, spooned onto a slice of crusty bread.  Use them with pasta, as a chunky sauce, and add your choice of cheese for a vegetarian meal.  I like parmesan or feta, but goat cheese would be yummy as well.  Pair this almost-sauce with meatballs, and it would make a fantastic messy sandwich.

Roasted Tomatoes

1.5lbs fresh tomatoes, cut into uniform sized pieces (if you have cherry tomatoes, just slice in half), large cores removed

olive oil

1 tsp. kosher salt

3 grinds of pepper (or, season to taste)

1 tsp. chopped rosemary

4-6 cloves garlic, rough chopped

5-6 leaves fresh basil, torn

Heat oven to 325 degrees.  Oil bottom and sides of baking dish, and add tomatoes, garlic and rosemary. Drizzle olive oil over tomato mixture, using enough that all are well-oiled.  Stir well (I use my hands), and season with salt and pepper.  Roast until the tomatoes are collapsed and wrinkly, and have released their juice.  I usually stir them once during the cooking time.  Depending on how small you cut your tomatoes, they can take anywhere from 1-2 hours to cook.  I usually check them after an hour, then in 15 minute increments until they are done.  Pull them out of the oven and scatter the basil over them.  Stir well, check seasonings and use more if needed, and serve, or cool and store in the refrigerator.

Y’all, there is nothing that makes me happier than picking out a variety of Texas-made treats to send to a friend, and acquaintance, or a work associate.  I recently picked up a few things for a client who is based in Louisiana (also a great state for delicious goodies), and the hardest part was trying not to go overboard.

I posted yesterday about Royers Pie Haven and the warm pie delivery that earned me brownie points (see what I did there?), sharing that they ship here, there and everywhere, as well.  Some of my other favorite local businesses who ship are Delysia Chocolatier, Lammes Candies (those Longhorns!), Confituras (because who can resist Salted Caramel Pear Butter? I’ve learned of another Austin business that my waistline would prefer I ignore.  Stephanie Ayers was born into the tradition of making rum cakes to gift to friends during the holidays.  Her mother developed the recipe, and taught Stephanie.  By the time she was in high school their cake production had gone from less than five cakes baked to more than 40 delivered to what certainly must have been very grateful friends.  Stephanie turned that tradition into Rum Yum Cakes, and has been busily building up a loyal following for her incredibly tasty cake.

Rum Yum Cakes launched last year, with three flavors: the original rum cake, pecan rum cake (made with Pecan Street Rum distilled in Pflugerville) and coconut rum cake.  They’re adding new flavors for 2014, too.

I love that Rum Yum Cakes offers notecards to send with your cake, including a cute one celebrating expectant moms, and a sassy way to tell someone you love them.  I think that opening a cake business requires a great sense of humor and lots of rum, don’t you?

Growing up in Corpus Christi where Stephanie’s father had a medical practice that included low income patients, her holiday memories also include tamales.  He would forgo monetary payment in favor of handmade tamales, and their delectability is something Stephanie associates with the season.  She says “Perhaps it was also an experience because you got to literally unwrap your own food!  Aside from the taste, I love what they stood for — helping others who may be less fortunate.”

The Pies of Texas Are Upon You

Royers Pie Haven opened up in Austin recently, in the old Toy Joy spot at 29th and Guadalupe.  They’ve gained attention immediately for the super cute makeover of the space as a Texas chic spot that is sunny, cheerful and welcoming.  To say that this move to Austin is a match made in heaven is an understatement.  Their warm buttermilk pie sent me into a swoon at first taste years ago, in their Round Top location.  But wait a moment, what is this? Savory pies are also on the menu!

I’m not sure which one I want to try first, because all of the descriptions are mouthwatering.  The HeeHaw would be great for an office breakfast meeting, with its combination of sausage, bacon, jalapeño and onions with cheddar cheese.  And then there’s the Margarita Chicken Pizza Pie…yes, please.  There’s at least one veggie version, too, for those of us abstaining from beef, pork and fowl.

Royers has long been in the mail order pie business, but in Austin they’ve launched a delivery service.  I was their first (or at least one of the first) to order warm pies to be delivered to a downtown office.  I knew the pies would be a hit, because hey, it is PIE, but the feedback was beyond my expectations.  One normally conservative associate called to say “Pardon my candor, but holy s%*# they were worth every calorie!”  We’re used to cupcake and cookie deliveries, but now there is a new treat on the scene, and it is decadent!
